WINERY UNIT
Our winery pilot project aims to revolutionize traditional winemaking techniques through innovative
practices. With a focus on sustainability and quality, we’re pioneering new methods to enhance flavour
profiles and production efficiency. Through this project, we aspire to set a new standard in the industry,
marrying tradition with cutting-edge technology to create exceptional wines.


With a production capacity of 1500 litres per year, our primary focus is to promote indigenous fruits of the
Konkan region, such as Jamun-Java Plum (Syzygium cumini), Mango (Mangifera indica), Jackfruit
(Artocarpus heterophyllus), Cashew Apple (Anacardium occidentale), Kokum (Garcinia indica), and
Karonda (Carandas plum), thereby assisting local fruit growers in enhancing production.The Sahyadri Agricultural winery operates in collaboration with the Institute of Chemical Technology,
Mumbai. We prioritize providing hands-on training to our students and organizing workshops to further
enrich their knowledge
